These strains produced up to 19 g/L glycerol. On the basis of the industrial strain Y-563, recombinant strains with 3.3-folds increase of the intracellular trehalose concentration were obtained. These strains produced more ethanol during high temperature alcoholic fermentation of glucose. Resistance of received recombinant strains to different stress factors was verified. The BY/TPI25/gpd1gpp2f/fps1 strain (with increased glycerol production) showed the highest osmotic tolerance. Strains BY/TPI25/gpd1gpp2f (with increased glycerol production), 563 TSL1 No. 2, 563 TPS 1/2 No. 9, and 563 TPS 1/2 TSL 1 No. 10 (with increased intracellular trehalose concentration) showed higher resistance to freezing-thawing compared to the corresponding wild-type strains. Also, some essential bread baking properties of Y-563 and 563 TPS 1/2 TSL1 No. 10 strains were tested in the pilot fermenter and it was found that a recombinant strain with increased trehalose content better fermented sugar in the sweet dough and longer maintained the activity at 35 ° C in comparison with initial strain. Together with PJSC "Company Enzim" (Lviv), a semi-industrial model of technology for obtaining baker's yeast, resistant to stress factors, has been developed.
