The replacement of the vacuum pump and the installation of a multichannel electronic thermometer dramatically increased the productivity of the model prototype for ultra-fast cooling. It was found that, although the average cooling rate of sugar solutions increases with increasing molecular weight, the cooling rates of solutions of sugars of the same molecular weight can differ significantly. It is established that among 0.2 M aqueous solutions of sugars the maximum cooling rate is achieved in a lactose solution (5.43 o/s).
