The modern technologies of fruit storage, directions of chitosan use in production and storage of food products are analyzed. The types of diseases of fruits and vegetables are considered: fungal, bacterial and viral, the main modern methods of protecting fruit and vegetable crops from pathogenic microorganisms were reviewed. The composition of the film-forming compositions is theoretically justified. Changes in the quality of vegetable crops during storage under different temperature regimes have been studied. It is established that the processing of fruits by film-forming compositions based on chitosan and decoction of LRS promotes better storage of organoleptic and physico-chemical properties. The developed film-forming compositions slow down the internal processes during the storage of fruits, namely, they slow down the loss of mass, dry substances, destruction of vitamin C and basic coloring substances. Thus, the positive effect of lengthening the shelf life of fresh fruits and vegetables was established. The antimicrobial properties of the developed film-forming compositions and the terms of their action were studied. It has been established that the samples of the film-forming compositions under study have a wide spectrum of antimicrobial activity during 35 days of storage in relation to 4 reference microorganism stains (E.coli, S. aureus, P. aeruginosa, C.albicans) and to all isolates sown from flushing liquid fresh fruits - UFHNB, E. fecalis and mold fungi.
