The following technologies have been developed: marmalade on agar with additives of gums of plant and microbial origin; jelly, enriched with vitamin C; fish snacks using protein supplement; cakes and oatmeal cookies using a sunflower seeds kernel concentrate. The method of quantitative determination of ascorbic acid in systems containing hydrocolloids, with the use of high-performance liquid chromatography is improved. Infrared spectra of Sudanese rose and black-brown soybeans were studied. The anti-oxidant properties of marshmallow with natural anthocyanin dyes were investigated.
