The subject of the study are Category II mucous membranes, cutting knots, an experimental sample of the apparatus for cleaning mucous membranes and by-products. The purpose of the work is to improve the combined, energy-saving processes of clearing of meat raw materials. In order to implement the proposed method of treating the mucous membrane, a device for cleaning mucosal offal was proposed. The basis of the developed method of cleaning and design of the proposed apparatus is a synergetic method of purification, consisting of short-term steam treatment with the aim of weakening the communication forces of the surface mucous layer with a submucous layer and subsequent mechanical purification, which is carried out by cutting the surface layer. The use of the proposed design of the apparatus intended for the food industry will provide an opportunity to improve the quality of raw material purification, to intensify the technological processes of its processing, to save material resources during the manufacture of the machine itself and to reduce its energy intensity, improve the working conditions of the personnel.
