The approaches to mathematical modeling for the determination of optimal ratios of prescription components of configurations, the substantiation of the choice of raw materials for their production are proposed. The recipes have been developed taking into account the functional orientation of the raw ingredients, selected technological regimes and parameters for the preparation of jelly from celery juice, creams based on confectionery from white roots. The determined organoleptic, physical and chemical indicators of quality, investigated safety indicators, including terms and modes of storage of the developed assortment of vegetable desserts on the basis of white roots.
