Among the basic criteria for the chemical composition of grapes, we determined mass concentration of sugars, titrated acids, pH, amino nitrogen and calculated indicators — technical maturity and glucoacidimetric. Among the special indicators of the phenol complex, mass concentration of total monomeric and polymeric substances, technological reserve, macerating capacity and degree of extraction of phenolic substances during pressing of whole berries, absolute and relative enzymatic activity of o-diphenol oxidase were determined. Aromatic maturity of grapes was determined by organoleptic evaluation of berry skin and pulp, as well as determining the concentrations of free and glycosylated forms of terpene alcohols using steam distillation and gas chromatography.
