Research methods are adaptive standard methodologies of plant biochemical analysis and methods developed in the laboratory. The aim of research was the study of biochemical criteria for the assessment and selection of genotypes on the quality of grain and the resistance of plants to biotic and abiotic factors of the environment for the development and implementation of methods for evaluating the selection material for the creation of high-yielding, high-quality varieties of grain crops with increased adaptive properties. Results: the collections of wheat varieties of domestic and foreign selection, introgressive lines of soft winter wheat, obtained as a result of hybridization of introgressive lines and amphipoles with the participation of Ae.tauschi and E. sibiricus with modern sorts of selection of PBGI-NCSCI, are analyzed according to biochemical indices related to the formation of grain quality. The method of quantitative determination of individual fractions of grain protein with different molecular weight with the use of high-performance liquid chromatography is developed. Investigation of the protein content and its fractional composition allowed to reveal genotypic features according to these indices. The study of biochemical parameters of grain (protein, starch, tannins, beta-glucans, amylose, alfa-beta-amylase activity, digestibility of proteins, content of separate fractions of water-salt proteins, phytate) was investigated, which are related to brewer's properties, food and the fodder value of barley, in the collections of varieties of spring barley. Established varietal differences in the studied biochemical parameters that affect the brewing properties, nutritional value and feed value of barley grain. Selected biochemical parameters that can be used to breeding varieties of brewing, food and feed uses. The method of isolation and identification of beta-carotene in maize corn using high-performance liquid chromatography has been developed. The developed method analyzes the genotypes of maize of foreign and Ukrainian selection on the content of beta-carotene. The method allows to quickly and accurately determine the content of beta-carotene and can be implemented in breeding practice for the selection of promising corn genotypes with a high level of accumulation of beta-carotene in grain. Introduction: developed methods for assessing the stability of genotypes of cereals, recommendations are given for use in breeding programs of the Institute and other institutions.
