The species composition has been characterized and the biological activity and safety for human health of lactic acid bacteria strains isolated from traditional fermented products of Ukraine has been studied. Actinobacteria have been found that are capable of assimilating phenolic compounds, their biological properties. The antiviral activity of the extracellular lectin of the saprophytic strain Bacillus subtilis B-7014, which showed specificity for sialic acids. The composition of yeast microbiota in foods with a high salt content, the resistance of isolated yeasts were determined. The biodiversity of yeast in human dairy products and the gastrointestinal tract of a person is revealed, the features of interaction with bacteria and the effects on the aggregative behavior of pseudomonads are investigated. The adaptive response of Saccharomyces cerevisiae yeast cells and luminescent bacteria Photobacterium phosphoreum to the action of low-intensity EMI (EHF) with the participation of polyphosphate exchange enzymes has been investigated and a test system has been developed for evaluating the biological effect of EMR.
