Reasonably the state-of-the-art review of literary and patent sources concerning technologies of flour confectionery of the increased nutrition value, namely sand and biscuit semi-finished products. Structural and mechanical and quality indicators of the new developments directed to improvement of nutrition value of sand and biscuit products are analysed. Results of researches of influence of powder from walnut leaves on properties of shortcake dough and the baked sand semi-finished products and also influences of flour of germinated seed of wheat and powder кероб on properties of egg sponge and the baked biscuit semi-finished products are given in an experimental part. The compounding and the technological circuit of production of a sand semi-finished product "Ozdorovtuy" and the sand products "Sharm" and "Bukovinka" with use of powder from leaves of walnut and flour of germinated seed of wheat is developed.
