The subject of research is the composition of multicomponent selective solvents, the content of associated substances in vegetable fats, oxidation products and impurities of vegetable fats. The purpose of the work is the scientific substantiation and development of new approaches to the creation of resource and energy saving technology of refining vegetable fats using selective solvents. Research methods. The physico-chemical and organoleptic properties of the refined fats were investigated by standard methods, and a trial neutralization and winterization of fats was carried out. Mathematical methods using the software packages Statistica, Mathcad, Matlab and Misrosoft Excel are used for planning experiments and data processing.
