Theoretical and practical results, novelty: first defined physico - chemical characteristics of stearic seed type and composition acylglycerols oil obtained from it, and also established the presence of oil disaturated - monounsaturated fraction acylglycerols. Defined rational fractionation conditions sunflower oil stearic type and proven ability to create effective technology specialty fats containing no industrial trans fatty acids.
