The purpose of part 3 of the Project: development of reference methods of analysis of arginine for the use of arginine-hydrolizing recombinant enzymes. The aim of phase 1 (2018), part 3 of the Project: the development of enzimatic-chemical method of arginine analysis using arginase and testing it on real samples of fruit juices. Research methods: microbiological, biochemical, physico-chemical, analytical. As a result of the work in 2018: arginine-selective recombinant enzymes, namely, arginase and arginine deiminase from the corresponding microbial cells - over-producers of these enzymes, were isolated and characterized; enzymatic method of L-arginine analysis, based on arginase and acetylmonooxim, with spectrophotometric mode of signal detection was developed; this method have been successfully used for arginine analysis in real samples of fruit juices, thus it will be promising for exact and selective assay of arginine in beverages. The proposed scientific research corresponds to the level of the best foreign prototypes.
