Ivanov "Ascania-Nova" - National Scientifical Selectional-Genetics Center of Sheep Breeding popup.description2 A technological method has been developed to improve the quality of young mutton obtained from the young stock of the Ascanian Karakul breed by: removing fatty tails on three-day-old lambs using compression rings; the growing resistant lambs in the suckling period using probiotics; the weaning of lambs at 1.5-2.0 months of age; their intensive fattening up to 4.0 months and 6.0 months of age. It was established that the removal of fatty tail contributed to an increase in average daily gains from birth to 4.0 months of age by 2.3%. The control slaughter of experimental animals at 4.0 months of age showed that the slaughter weight and slaughter yield in the control group were 12.37 kg and 44.3%, whereas in the experimental group, 13.12 kg and 45.6%, respectively. The organoleptic evaluation of the obtained young mutton showed that the control group in the broth had an average score of 7.25 ± 0.08, whereas the experimental one had 7.48 ± 0.45, or 3.2% higher. There was also a difference in the boiled meat: so the control group had 7.72 ± 0.08 balls, and the test group had 8.04 ± 0.2, that is, 4.1% more. In the period from 4.0 months to 6.0 months, the average daily gain in the control group (41.7 kg) was 260 g, while in the experimental group (44.1 kg) it was 290 g, or by 11.5 % above. The control slaughter at 6.0 months of age showed that the mass of chilled carcass was almost the same - 17.4 kg in the control and 17.5 kg in the experimental one. The tail weight was 1.45 kg in the control group and only 0.34 kg in the experimental group. The content of intramuscular fat in the experimental group was 36.4% more than in the control group (3.03 ± 0.64% versus 2.20 ± 0.48%). The developed technological method of removing fatty tails from the rams of the Asсanian Karakul breed followed by their intensive fattening contributed to obtaining 120 UAH of additional profit from one animal with a significant increase in the quality indicators of sheep meat.
