The aim of the work is to develop a system of technological methods for increasing the quantity and quality of sheep milk and its products based on the use of new feed and technical means. A technological method has been developed to increase milk productivity and reduce the content of somatic cells in the milk of Merino sheep using Austrian wormwood. It was established that at the end of the experiment the amount of synthesized milk fat, protein and sugar in the group that received wormwood was 8.7%; 8.9 and 9.0% more than in the control, while reducing the number of somatic cells by 63.9%. A technological method of processing milk into brine shaped cheeses with probiotic properties has been developed. For the manufacture of brine cheese with probiotic properties, breeding strains of bifidobacteria, lactobacilli, lactococci and propionic acid bacteria were used: B. bifidum, B.longum, L.diacetilactis, Str.thermophilus, P.freudenreichii, Lactobacillus acidophilus etc. (total 16). It was established that cheese with probiotic properties scored 404.5 points (according to the scale of organoleptic evaluation of brine cheeses), that is, 11.74% higher than the control (362 points), which indicates an increased taste. A scheme of a multifunctional module was developed based on a linear type milking machine for milking ewes and processing milk into formed cheese. The development includes a newly created linear type installation with "Milkline" elements for milking sheep; storage for temporary keeping of sheep with technological parameters and requirements; technological equipment for processing the produced milk, which ensures unification and improvement of the technological effectiveness of the milking process.
