The purpose of the work is to develop, on the basis of the resource-saving keeping of sheep, a set of technological solutions for the intensive production of lamb meat and young mutton with quality indicators of the world requirements level. In particular, the expediency of intensive fattening of the Ascanian Fine-Fleeced breed lambs up to 100 days of age has been proved. It has been established that the lamb meat obtained at this age is of high quality: the fat content in the carcass (15.71%), the content of intramuscular fat in the longest back muscle (1.19%). The slaughter mass was 12.5 kg with a slaughter yield of 44.75%. A technological method has been developed for the intensive production of lamb meat and young mutton based on the production of three lambing in two years and the use of new feedstuffs. These techniques provide: fattening intensity with average daily increments of 148-195 g; live weight of fattened animals at 5.0 months of age - 36.3 kg, 6.5 months. age - 44.3 kg, at 8.0 months. age - 51.0 kg; receiving lambs before slaughter - according to the first category of fatness, with a slaughter weight of 5.0 months. age - 15.0 kg; 6.5 months age - 18.0 kg; 8,0 months age - 21.1 kg.
