The high promise of the wheat varieties for the domestic grain-processing industry is determined.Complex system studies of new varieties of wheat with high biological value were conducted.The regularities of the main technological processes of post-harvest processing, storage and processing of investigated objects, as well as the substantiation of their modes of conduct, and the obtaining of new grain products of high nutritional value with the full use of by-products of processing of milky and soft winter wheat in the composition of feed and biofuels.It has been established that spelt wheat can be used to stabilize the baking properties of wheat grain to increase the mass fraction of protein, gluten and its weakening in the grinding lot during the processing of grain of baking wheat with a very strong gluten. When further exploring the grain of spelt wheat an object of post-harvest processing and storage, it is necessary to take into account the smaller thickness of the cover tissues of grains, to use the milder modes of drying and transportation.The basic modes of the technological process of processing of new wheat varieties with high biological value in groats and flaked products were investigated. The basic technological schemes of cleaning and processing of spelt wheat into groat, which involves the use of grain of different quality, were developed.The peculiarities of the developed schemes are the use of traditional equipment for the Ukrainian grain-processing industry, which simplifies the implementation of the developed schemes at existing enterprises in the industry.In the production of flakes, the polished groat enters the water-heat treatment stage, which is carried out according to the structure of cold air conditioning. The kernel is moistened with warm water up to 55-60 ° C to a humidity of 22-24% and directed to a heat-insulated bunker for tempering, which lasts for 2-3 hours. It was established that the guaranteed shelf life of grain cereals in a package with BOPP at a temperature of 18 ± 2 ° C and a relative humidity of 70-75% is 6 months.Based on the analysis of well-known technologies for the production of solid biofuels, advanced technology for the production of solid biofuels from waste from grain mills and oily press production, which provides for the following measures to improve the technology of production of solid biofuels:preparation of raw materials can be carried out both on separate technology and on the principle of batch technology, the possibility of simultaneous production of pellets and briquettes in accordance with the order or needs.Regime conditioning of raw materials in the production of solid biofuels: steamed to a temperature of + 80-100 ° C, for 10-30 seconds, and homogenized, vapor pressure - 0,2-0,4 MPa and steam consumption of 50-60 kg / ton. Rosigrated and moisturized to 12% of raw material directly enters the doser press granulator, where it is loosened and dosed into a mixing chamber.
