The purpose of the research is the development and scientific substantiation of technologies for health-improving food products and their use in the nutrition system of Ukrainians. Research methods - organoleptic, physical, physico-chemical, microbiological, toxicological, system analysis, quantum-chemical modeling, planning and mathematical modeling, processing and analysis of the results. The technologies of new food products with iodine-containing additives, rich biscuits of increased nutritional value, low-calorie products with sweeteners, gel-forming semi-finished products based on polysaccharides and products based on them have been developed; An algorithm for quantum chemical modeling of systems based on effective polysaccharides has been developed. The practical significance of the research results is that the developed technologies can be used in specific government and international projects with the aim of improving the living conditions of people of different age categories and are aimed at the economic development of the food industry. The materials developed, the principles and results of research can be used in the process of teaching the disciplines of general professional and specialized cycles in the system of higher education, as well as be the basis for highlighting modern problems of nutrition, management, system analysis of various components of modern food production processes and enterprises of restaurant industry. The scientific novelty of the obtained results consists in the creation of technologies for health-improving food products with the content of biologically active substances and their complexes for the purpose of regulating and activating metabolic processes, preventing chronic diseases and inhibiting aging processes. Concentrated on new food product forms. For the first time, quantum-chemical modeling of food systems and modules has been introduced into food technologies, especially those relating to the study of the chemistry of ionotropic gelation in the matrices of polysaccharides. The introduction into production will expand the range of existing products for all segments of the population, which coincides with regional and state programs for the development of society and the improvement of living conditions of Ukrainians.
