The subject of research - Rigia oil, animal protein, protein-fat emulsion on the basis of oil of rhizhii and animal fats, model stuffing systems using protein-fat emulsions, boiled sausage with a balanced fatty acid composition. The purpose of the work is to develop a technology of cooked sausages of special purpose using a protein-fat emulsion based on rizhiev oil with a balanced fatty acid composition. The prescription composition and technological process of the production of cooked sausages with BZHE on the basis of Rigia oil is developed. It is proved that Rigia oil is a source of biologically active components and can be used as a promising raw material intended for the enrichment of meat products individually or in combination with other fatty components, in particular of animal origin, in compositions balanced by the ratio omega-6 and omega- 3 fatty acids. The functional-technological and structural-mechanical properties of BJE on the basis of Rigia oil have been investigated, and the prescription composition and technological process of production of cooked sausages with its use have been developed. Organoleptic, physico-chemical parameters and nutritional value of new products and their changes during storage are investigated.
