The purpose of the work is the creation of technologies and hardware solutions for the integrated and waste-free processing of pond fish, as well as the development of food technologies based on them, expanding the range of relevant semi-finished products and culinary products. Research methods - organoleptic, physico-chemical, methods of mathematical statistics and correlation analysis. Analysis of the consumption and catch of fish products in Ukraine found that raising the level of provision of the population of Ukraine with fish and fish products is possible due to the rational use of the potential of all domestic freshwater reservoirs, in particular the Kremenchug. The recent increase in the level of catch of pike perch, catfish, silver carp, perch from the Kremenchug reservoir requires the development of measures to shape the quality of products from this fish. In recent years, the level of catch of carp, bream, zander and other types of freshwater fish has been stable. This gives grounds for the enterprises of the food industry, trade and the scientific community to focus on these types of fish with the aim of expanding the range of fish products.
