Purpose of the work - scientific substantiation of indicators of quality and safety of special foods - baby food. The paper uses sanitary-epidemiological, physicochemical, microbiological, physiological, immunological, morphological, search-information methods of research using modern equipment, as well as mathematical method of processing the results. Conducted biomedical studies of a wide range of baby foods allowed us to establish quality criteria and safety indicators, the possibility of using them in baby food. Nutrient composition of baby food for healthy baby and children with special dietary problems is scientifically substantiated.
