The purpose of the research - clarification of conditions and developing of the preparative methods for the proteins-precursors isolation from milk, which can be used for bioactive peptides obtaining and their further application in functional foods. Development of isolation and purification methods, as well as identification methods for proteins-precursors analysis, is nessesary due to the uneven placement of bioactive peptides in the structure of proteins-precursors from milk. Accessible electrophoretic systems for serial analysis of proteins-precursors from milk whey and caseins have been developed on the basis of disc-electrophoresis in native conditions and homogeneous electrophoresis in the presence of urea. The technique may be useful for the rapid identification of casein fractions and in the express analysis of milk and milk protein products naturalness. For the obtaining of different amounts of bioactive peptides proteins-precursors from milk whey, are suggested preparative electrophoresis and gel filtration, and from the casein complex - gel filtration and ion exchange chromatography in a volume on weak anion exchangers. General fractionation scheme of biologically active peptides proteins-precursor from milk was proposed on the basis of the received results.
