The influence of the season of the year, technology, type of feeding, lactation period and other indicators of the qualitative composition of milk on the dynamics of these indicators in the milk of cows from farms of various forms of ownership were established. Various methods for milk quality determining according to indicators of its nutritional value, naturalness and somatic cell content were evaluated. A method for monitoring the quality of raw milk was developed and a database of biological indicators of raw milk was created taking into account the technological conditions of production.
