The biochemical parameters of seeds of 7 varieties of millet and 2 varieties of amaranth of Ukrainian selection were studied. The most promising varieties for obtaining high-quality oil by liquefied gas extraction have been identified. It is established that under the conditions of harvesting unripe millet grain and the presence of chlorophyll residues and their decay products, preconditions are created for the synthesis of reactive oxygen species in reserve tissues, which are able to destroy cell membranes and accelerate oxidative processes. It is shown that the content of carotenoids in the products of grain extraction by liquefied gas has a positive effect on the qualitative characteristics of the oil, in particular on the indicators of acid and peroxide numbers. The varieties of millet with the highest content of milliacin were determined. The most promising variety of amaranth in terms of squalene content in oil has been identified. Researches of quality of vegetable oil at various quantitative and qualitative indicators of seeds, process of sample preparation of raw materials, modes and sequences of extraction, filtration and degassing are carried out. The optimal mode of liquefied gas extraction of lipophilic fraction of vegetable raw materials of millet and amaranth is established. The components of the generalized scheme of the technological process, which is the basis for the use of the technology of extraction of vegetable oil with liquefied gas, have been finalized.
