The composition of oligosaccharides and polyphenolic compounds has been determined. Preparations of xylooligosaccharides and biologically active compounds have been shown to have prebiotic properties. According to the results of biomedical studies, the drug "Zepofen" has high antioxidant activity. The patterns of limited enzymatic hydrolysis of hemicelluloses: corn arabinoxylan, fungal beta-glucan have been investigated. Their supramolecular iron-containing complexes belonging to nanoscale structures were obtained. The supramolecular complexes of papain and polysaccharides were obtained: corn arabinoxylan and water-soluble beta-glucan yeast.
