Object of the study - vegetable raw materials and food systems. Methods of study - galvanostatic coulometric titration, spectrophotometry in the visible region. The current state of the science of antioxidants and their classification by chemical nature, methods of chemical analysis of individual antioxidants and determination of total antioxidant capacity in plant raw materials and food systems are discussed. Experimental units for automatic coulometric titration have been designed and constructed. The total antioxidant capacity of vegetable raw materials (blueberries, grape seeds, dried mint and chamomile) and food (various types of caramel, fruit jelly, bread samples) were determined. Validation evaluation of the method of determination of ascorbic acid in confectionery (fruit jelly, glacial caramel) by coulometric method was carried out. The processes of extraction of antioxidants from degreased grape seed powder and blueberries were optimized using the response surface methodology. Adapted and validated spectrophotometric methods for determination of total polyphenols with Folin-Chokalteu reagent, total flavonoids and total anthocyanins in vegetable raw materials (grape seed powders, dried raw bilberries, chamomile and mint) and food systems (flax) , bread samples). Statistical methods show a positive correlation between the quantitative parameters of the antioxidant capacity and the total polyphenols content. 6 articles and 12 conference abstractss were published on this topic in the reporting year. The research results were implemented in the educational process of Kharkiv State University of Food and Trade (6 acts of implementation dated December 8, 18).
