The subject of the study is a complex of physicochemical effects on the properties of water and its solutions, their structural and energy state before and after physicochemical influences. The aim of the project is to create scientific bases for technologies of water restoration to its natural structural and energy state for further use in the production of foodstuffs, medicines, drinking water of water supply systems, production of bottled drinking and mineralized water. The research is aimed at using the scientific basis of technological processes of restoration in the water of its natural structural and energy state for the creation of technologies for the industrial production of drinking water, beverages and activated water as raw materials of food products with pre-existing wellness properties. The essence of the development is to reproduce a complex of non-reacting physical factors on water, identical to the natural effect on water during its global self-purification cycle, namely: electromagnetic irradiation of atmospheric water by cosmic and solar radiation; the influence of a high-voltage electrostatic field identical to atmospheric electrical phenomena; the impact on water of dissolved gases identical to the metabolites of the aquatic bioenvironment inherent in the microbiota of natural surface waters; contact interaction of water with the surface of silicon-containing minerals, identical to the natural photocatalytic processes on the sun-illuminated water-mineral boundary.
