A total of 34 samples of honey were studied using organoleptic, physicochemical and toxicological methods. It is established that according to the defined quality indicators 100.0% of honey samples in 2018 and 94% of honey samples in 2019 met the requirements of DSTU 4497: 2005 and international requirements "Codex Alimentarius Standard 12-1981 for Honey" and "Honey Directive 2001/110 / EC ». According to the results of a study of 11 samples of honey harvested in 2019, it was found that the quantitative composition of inorganic elements differed, both in samples from one area and from one type of honey. The results are formed in the information-analytical report on the content of inorganic elements and physico-chemical quality indicators of honey of different botanical and geographical origin, which reflect the main risk points that may affect the quality and safety of beekeeping products and which need constant monitoring.
