Objects of research are technologies of potato chips, parsnip chips, dry baby food, high-temperature coextrusion products. The purpose of the work is to improve technologies and expand the range of food concentrates with high nutrition and biological value, instant foods, baby foods, therapeutic food products. Research methods: organoleptic, physicochemical, chemical, experimental-statistical, conventional and special with the use of modern devices and information technology. The technology of potato chips has been developed, which allows to obtain a product with a lower mass fraction of frying fat and enrichment of chips with polyunsaturated fatty acids ω-6 and ω-3. The technologies of parsnip chips of high nutritional value and low energy value have been improved and scientifically substantiated. The expediency of use of different types of milk in the technology of dry milk mixes for functional baby food is proved on the basis of theoretical analysis and experimental researches. Ways to expand the range are scientifically substantiated and fillings for coextrusion products of increased nutritional and biological value are developed. Economic advantages are the lack of analogues of products in the domestic market and high social impact. The ecological expediency of the proposed technical solutions is explained by the use of environmentally friendly raw materials in the production of developed food concentrates.
