The aim of the work is to analyze grain, flour, dough and bread quality indicators of winter bread wheat of the Myronivka breeding; to identify genotypes with high technological properties and stable expression of quality traits; to establish part of sum square of hydrothermal conditions, genotype, preceding crop, sowing date on quality indicators grain and flour; identify strong correlations between quality indicators. Research methods – laboratory, technological analysis of flour, mathematical and statistical. Results – A relatively high level of stability of all quality traits over the years has been established in Podolianka, Hratsiia myronivska, Lutescens 55198 and MIP Assol. According to, the comprehensive assessment, Estafeta myronivska, MIP Assol, MIP Lada, Lutescens 37519, Lutescens 55198, Erythrospermum 55023 combined a set of high quality indicators. Was revealed decisive (50,1–63,4 %) influence of hydrothermal conditions of the year of cultivation on the mass of 1000 grain, grain vitreousness, sedimentation value; significant (20,1-52,1 %) influence of genotype on water absorbing ability of flour, volume and evaluation of bread, gluten content, physical properties of dough, gluten deformation index.
