At this stage of research, the results of selection of winter mustard for fatty acid composition were obtained. Significant negative correlations of erucic acid content with all other fatty acids were revealed. The results of studying the collection samples of gray, white and black mustard of different geographical origin on the basis of oil content and quality were obtained. Promising samples for selection work on these indicators are selected. A negative correlation was found between the fat and allyl mustard oil content in gray and black mustard. The revealed considerable scope of variation of the basic fatty acids promotes creation of grades of various directions of use. The results obtained: a database of mustard samples (295 pcs.) On the main biochemical parameters, which will significantly accelerate the selection process and reduce costs.
