The data of the chemical analysis of the muscles of the doves showed that the proteins of the pectoral muscles are characterized by a higher content of essential amino acids in comparison with the muscles of the thigh 40.36% and 27.41% in King, in Teksan - 39.84% and 32.27%, respectively. The level of nonessential amino acids is also higher in the pectoral muscles than in the thigh muscles 27.82% and 23.33% in King, 26.91% and 23.76% in Texan. The most productive for meat pigeon breeding is the crossing of the King and Texan breeds. Crossing of male Teksan breed with females of King breed showed a high result weight of a carcass of a group of doves - 373.3 g, slaughter yield in groups is also more by 0.8%. The data of chemical analysis of the muscles of pigeons showed that the proteins of the pectoral muscles are characterized by a higher content of essential amino acids compared to the muscles of the thigh, 38.43% and 31.31%, respectively. The level of nonessential amino acids is also higher in the pectoral muscles than in the thigh muscles 29.84% and 25.96%. Scientific and practical recommendations “Technological measures for the production of pigeon breeding products for small and medium-sized businesses” were prepared.
