The purpose of the work is to develop theoretical and methodological approaches and practical recommendations for improving the quality of vegetable plants in ensuring its shelf life during storage. Research work was carried out with shallot plants, as well as marketable products of table beets, onions, late-ripe white cabbage grown under different cultivation systems (adaptive, intensive). Regulations for the use of biological products on shallow onion crops have been developed, which provides an increase in yield of 0.9 - 2.8 t / ha, reduction of bulb losses during storage by 2.0-9.3% (control - 11.8 - 12.8 %). The role of sulfur in the technology of cultivation and storage of marketable products of shallots - increase in yield by 0.5 - 1.9 t / ha and increase the safety of products by 2.6 - 8.9% relative to the recommended dose of N60R90K60. The mathematical dependence of the safety of commercial shallot bulbs on the dry matter content and the sum of effective temperatures during the growing season has been established. Based on the dependence, the regression equation is calculated to predict the shelf life of the product. The mathematical relationship between the accumulation of dry matter in the bulbs and the sum of effective temperatures during the growing season in April and the first decade of May, as well as the content of dicycres and the sum of effective temperatures and precipitation at the end of the growing season (third decade of June). The influence of cultivation systems on the change in the quality of onions, beets, white cabbage and the yield of marketable products after long-term storage and natural weight loss has been studied.
