The database of biochemical and technological indicators of hops of domestic and foreign varieties has been supplemented. The biochemical and technological criteria for the evaluation of breeding varieties of hops and products of its processing in accordance with the purpose of the target product are scientifically substantiated. The choice of hop variety for brewing, baking and pharmacology with the provision of taste and aromatic properties and characteristics is substantiated. Scientific and methodological recommendations "Suitability of domestic varieties of hops for their use in brewing and baking" have been developed. This will allow positioning Ukrainian varieties on the domestic and foreign markets and expanding the scope of use of Ukrainian hop products.
