The content and qualitative composition of hop essential oil components of Ukrainian and foreign varieties, which are in the greatest demand among Ukrainian brewers, have been studied. A database of biochemical and technological indicators of essential oil of hops of domestic and foreign varieties has been formed, on the basis of which methods for determining the sensory evaluation of the aroma of hops of domestic varieties and beer made from them will be created in the future. The dependences of the accumulation of bitter substances, essential oil and its components in the cones of domestic hop varieties during the period of their technological maturation are determined. Establishment of dependences allows to develop new approaches to terms of collecting hop raw materials of a certain variety of hops, at which the essential oil and its separate components accumulate as much as possible, to form batches of hops with the set functional and technological parameters of its quality. Technological solutions for creating special aroma profiles in beer using the essential oil of hops of Ukrainian varieties, based on which developed and issued scientific and practical recommendations "Method of using the essential oil of hops in brewing", which improves the taste and aroma properties of beer and enriched its biology active compounds of hops.   Product Description popup.authors Vlasenko Alyona S.
