The subject of the research is a comparison of the database of European methods of analysis of fat and oil products with domestic ones, taking into account the peculiarities of soil and climatic zones of growing oilseeds. The purpose of the work is to develop methodological approaches to control the safety indicators of fat and oil products in the context of the approximation of Ukrainian legislation to European. Research methods - a systematic analysis to assess the effectiveness of the application of international regulatory documents in Ukraine, taking into account the risks and possible consequences on the basis of statistical methods, in particular, the Bayesian approach. A base of regulatory documents has been created and guidelines have been developed for quality control of fat and oil products and their use in food production.
