The subject of the study is the organoleptic, physico-chemical parameters of seeds and stearin type oil. The purpose of the study is to create a rational technology for the production of special-purpose fats based on stearin type sunflower oil (fractionation) for use in food and oil industry technologies. Research methods - organoleptic and physico-chemical parameters of oilseeds and oil samples are determined by standard methods; the fractional composition of acylglycerin oil was determined according to the methods developed by UkrNDIOZh NAAN (Kharkov) the fatty acid composition and structure of acyl glycerin oil was determined by gas chromatography. Theoretical and practical results, novelty: for the first time, the physicochemical characteristics of stearin type sunflower seeds and the composition of solid triglycerides of oil obtained from it were determined. The effect of crystallization temperatures, cooling rate, and fractionation duration on the yield and physicochemical parameters of the stearin-type sunflower oil fractions was studied. The possibility of creating an effective technology of special fats that do not contain industrial trans isomers of fatty acids has been proved. The target fraction of stearin type sunflower oil is used as part of bread. Efficiency of application: the use of new technology opens the way to increasing the profitability of enterprises, since it will allow to obtain valuable food product from domestic raw materials and reduce the country's dependence on imports.
