The subject of the study is physicochemical parameters, nutritional and biological value of models of food systems and products based on them. The purpose of the work is the creation of promising competitive food systems of increased nutritional and biological value based on oil-containing raw materials. Research methods: the study of the physical and chemical parameters of the meal is carried out in accordance with GOST 13496.15, GOST 7169, GOST 13496.2, GOST 13979.6, MVZ 081 / 12-0243-05, MVZ 081 / 12-0244-05, GOST 26927, MP 2273, GOST 28001, DSTU 4924, DSTU 8365. Mathematical modeling and calculation of food system models in the MattCad software package was carried out by solving a system of equations compiled taking into account the requirements of nutritionists and the amino acid and fatty acid composition of the used meal and wheat flour. The resulting models of food systems of increased nutritional and biological value can be proposed for use in the technology of bakery products.
