The subject of research physico-chemical parameters of test fat in the initial state and after interesterification in the presence of a new and classic industrial catalyst. The purpose of the work is to determine the shelf life of a new interesterification catalyst based on alkali metal glycerates in comparison with the industrial catalyst and to study the conditions for restoring the catalytic activity of the new catalyst. Research methods physicochemical parameters of test fat as criteria for the effectiveness of the transesterification process are determined by standard methods. Theoretical and practical results: regularities of change of catalytic activity of new and industrial catalysts of transesterification during storage are investigated; the conditions for restoring the catalytic activity of the new catalyst for transesterification of oils and fats are established; a comparative analysis of the efficiency of freshly produced new catalyst and after the restoration of catalytic activity. Efficiency of application: recommendations on conditions of restoration of catalytic activity of the new catalyst of interesterification of oils and fats are developed.
