Subject of research: kinematic viscosity and pour point of oils. The purpose of the work is the determination of the physical indicators of oils and the establishment of their dependence on temperature. Research methods: the fatty acid composition of the oils was established using gas-liquid chromatography methods; determination of the kinematic viscosity of sunflower oil was carried out using a VPZh-2 type capillary glass viscometer; pour point is determined using the Zhukov device according to DSTU 4463: 2005; mathematical modeling was carried out using software packages Microsoft Excel, Mathcad. Theoretical and practical results: experimental studies were conducted to determine the kinematic viscosity of high oleic and classic sunflower oil in a given temperature range. Tables of the kinematic viscosity of sunflower oil as a function of temperature have been developed using approximation dependencies. The effectiveness of the use of the created information data in the use by them of oil and fat industry enterprises in their economic activities, in the control of technological processes and the quality of oilseeds and fat products.
