The aim of the work is to scientifically substantiate the synthesis of food fat systems for health purposes with the addition of diacylglycerols and structured lipids, which impart health properties to these systems. Research methods - traditional and advanced special chemical, physical, physicochemical, microbiological. Rational conditions for enzymatic synthesis of fats, aimed at obtaining the maximum content of diacylglycerols and structured lipids, have been established. The screening of predictors that affect the phase transformations in fat systems for health purposes was carried out, and the intervals of their variation were established. The structural characteristics and rheological properties of fat systems for health-improving purposes have been established. The features of structural changes and rheological properties in fat systems enriched with components with health-improving properties during storage have been clarified. Comparative analysis of the resistance to oxygen action of oil and mayonnaise, which are enriched with diacylglycerols or structured lipids, has been carried out. The assessment of fat systems for health-improving purposes was carried out according to microbiological indicators. A methodology for predicting the physicochemical properties of fat systems for health-improving purposes by their component composition has been developed.
