Research methods - physical, chemical, microbiological, statistical. Standards of the standard for nitrate content up to 10 mg / kg, meet 73.7% of drinking milk sold in the retail network in the winter-spring period, and 91.4% of milk in the summer-autumn period, and dairy products, respectively, 91, 8% and 98.7%. The safe standard of nitrate content in raw milk, which is harmonized with European requirements and allows to process milk into any milk product, including for baby food, has been scientifically substantiated. The methodology of estimation of nitrate content in raw milk taking into account the European standard is offered. It was found that the process of denitrification of milk strain S. carnosus № 5304 in the amount of 103 CFU / cm3 reduces the content of nitrates in the samples of the first group - by 1.3 ± 0.05 mg / kg, the second 11.0 ± 0.2 and the third 21, 4 ± 0.3 mg / kg, respectively. Denitrification of milk of S. carnosus in the amount of 104 CFU / cm3 found that in the samples of the first group found traces of them (0.1 mg / kg), in the second group 5.6 ± 0.2 mg / kg, and in the third 15, 9 ± 0.3 mg / kg, respectively. Denitrification of milk of S. carnosus in the amount of 105 CFU / cm3 revealed that nitrates were practically absent in the samples of the first and second groups, their amount did not exceed 1 mg / kg, and in the third sample was in the range of 10.7 ± 0.3 mg / kg .
