The research purpose is scientifically substantiation of theoretical, methodological and practical principles of food products’ safety and quality management. The research subject is a complex of assortment, consumer properties, research methods, mechanisms, measures to manage the assortment, safety and quality of food products during their life cycle. Used research methods are sensory, physical, chemical, biochemical, microbiological, medical-biological, statistical, sociological, economic-mathematical, systems analysis, mathematical modeling. Theoretical, methodological and practical bases of food products’ assortment, safety and quality formation were substantenated, influence factors were revealed, the regularities of their consumer properties changes were established. The developing criteria for products and packaging materials composition were substantiated. The terms, during which indicators of new products’ food and biological value are characterized by a high degree of safety, were established. The efficiency of new sorbents, manufactured from plant waste in agriculture, in the absorption of organic and inorganic origin ecotoxicants from model aqueous solutions was proved. The social and economic effect of the new food products production and sale has been confirmed. It is presented due to the elimination of the import substitution problem, meeting the needs of target consumers groups. Waste-free processing of plant waste of agriculture prevents environmental pollution. The obtained sorbents can be used to solve environmental problems related to environmental pollution and as enterosorbents in medicine and veterinary medicine.
