Radical changes in the structure of supply (production and sale of meat, major producers, livestock and poultry), in the structure of demand (consumption, export-import operations and prices). In general, the meat market is an important component of the country's food market, the stability of which largely depends on the living standards of the population and food security of the country. It was found that the meat market operates in a rather difficult economic environment. Meat producers are increasing production with the decline of certain livestock industries. In Ukraine, there are transformation processes that cause changes in the structure of the meat market. It is determined that poultry meat has a monopoly share in the meat market. Analytical assessments and determinations of factors influencing meat production and further development of the meat market have been further developed. It is proved that the basis of the "meat diet" is poultry meat, as the most available type of meat. It was found that the main reasons for the change in consumer tastes are the level of purchasing power of the population, the price and quality of products, and its nutritional value.
