A significant differences of studied characteristics in the investigated genotypes of chickpeas and peas are established. The genotypic differences in the intensity of the bands, the presence or absence of some components in the electrophoretic spectra of albumin, vicillin and legumin, which affect on the nutritional value of chickpea and peas seeds were found using electrophoretic and densitometric analyzes. Significant differences in the content of flavonoids and anthocyanins in the seeds of chickpeas, peas varieties and soybean genotypes that differ in seed color were established. The relative moisture content, proline content and lectin activity in the leaves of the 2 upper layers of soybean plants, which differed in drought tolerance, in the vegetation phases that are most sensitive to moisture deficiency– in the phases of flowering, bean formation and plumpness were determined. It was found that in the flowering phase the level of lectin activity was in 2,1 times higher in the leaves of drought tolerant varieties compared to non-drought-tolerant varieties. In the plumpness phase, the middle level of all characteristics was significantly higher in drought-tolerant varieties compared to non-drought-tolerant varieties. It will be possible to select chickpeas, peas, soybeans genotypes for food and feed direction and soybean varieties with increased adaptive properties at the early stages of plant breeding using the studied biochemical studied characteristics.
