This leads to significant disorders in the human body, which cause serious health consequences. Therefore, the search for new food ingredients - dietary supplements that can have a preventive effect or a positive effect on the course of complex biochemical processes that cause disorders of carbohydrate and lipid metabolism is extremely important. The in scientific work defines the concept of "dietary supplements", their impact on human health and classifies dietary supplements by purpose. The basic principles of modeling and manufacturing of dietary supplements are shown. The analysis of the chemical composition of the leaves of some fruit trees and berry bushes is given. It is established that most of their components have a pronounced biological effect. The technological scheme of obtaining dietary supplements with a high content of antioxidants has been developed. The physicochemical parameters of tomato fruits for further use in the production of dried food products have been studied. The kinetics of drying of crushed tomato fruits is determined. The amino acid composition and its change in fresh tomato fruits and after their desiccation have been studied. The technology of obtaining tomato powder as an additive of high nutritional value is proposed.
