For the first time in Ukraine, a database on the fatty acid composition and content of cis- / trans-isomers in animal raw materials and cooked and smoked meat products - sausages, bacon, sausages, hot dogs. It was found that the content of trans-isomers in the fat phase of cooked and smoked sausages did not exceed (0.5-0.7) relative%. For the first time in Ukraine, a database on the presence of trans isomers in confectionery fats, glazes and a number of confectionery products (candies, ice cream, sweet baked goods) has been compiled. For the first time in Ukraine, the regularities of changes in the content of cis / trans-isomers of fatty acids in different fats (milk, beef, pork, confectionery, sweet cream spread) under different modes of high-temperature processing and during storage of products have been experimentally established. It is shown that the content of trans-isomers during storage at low temperatures is almost unchanged.
