The range of linear determination for NaCMC (0.2 μg / ml - 12.0 μg / ml) and κ-carrageenan (0.2 μg / ml - 30.0 μg / ml) was established. The optimal concentration of AO, 2 × 10-3 mol / l, was calculated, which allows to obtain linear response values in studies of a number of dilutions of stabilizer solutions. Comparison of the relative radiation intensities of AO associated with NaCMC and carrageenan makes it possible to clearly distinguish these two compounds in their mixtures. A method for determining the content of gelatin in dairy products by the identification of oxyproline - a non-standard amino acid has been developed. A method for determining the content of carbohydrate additives in cheeses by the composition of monosaccharides after hydrolysis of the test sample has been developed.
