Tairov Institute of Viticulture and Wine-making" popup.description2 The new red wine varieties breeded at NSC "Tairov Research Institute of Viticulture and Wine-Making» were evaluated. It is established that grape varieties Odessa Pearl, Agate Tairovsky, Charivny, Otrada are characterized by low values of technological stock of phenolic, colour substances and enzyme activity MFMO. Varieties are recommended for use for d table varietal wine materials production. It is determined that the use of autochthonous strains of wine yeast has a positive effect on physical,chemical and organoleptic characteristics of wine materials from grape varieties and selections of new breeding, selection, in particular, on the content and ratio of organic acids, aromatic compounds and sensory profiles of wines. Cabernet Sauvignon wines obtained using indigenous strains were characterized by improved aromatic and taste characteristics, especially when using strains Y 3646 and 3649 (floral and fruity aromas). The technological parameters for the production of red table wines from grape varieties breeded at NSC "Tairov Research Institute of Viticulture and Wine-Making» were selected. The industrial approbation of the technology of the ordinary red dry wine technology from grapes of new varieties was carried out.
