The population structure of Saccharomyces cerevisiae was analyzed using biochemical and DNA methods. The heterogeneity of the taxonomic composition of the grape yeast microflora (on the morphological elements of grapes and berries) and the dominance of the family Saccharomycetaceae are shown. The peculiarities of the population structure of wine yeast in relation to morphophysiological and biochemical characteristics have been studied. Among the biochemical parameters, the activity of enzymes that catalyze the reactions of plastic and energy metabolism, as well as the content of organic acids was studied.
